Clubhouse Eats: Grand Isla Navidad’s cheesy shrimp dip is the ultimate poolside snack

About 550 miles west of this week’s WGC Tour stop in Mexico City, the Club de Golf Chapultepec, and 150 miles south of Puerto Vallarta, you’ll find one of GOLF’s Top 100 Resorts in North America, the Grand Isla Navidad Resort.

Though it boasts 27 holes of gorgeous golf, the resort also offers a myriad of other activities: snorkeling, fishing, windsurfing and diving, to name a few. But if you’re like most people on a Mexican vacay, you’ll also want to ensure that there’s plenty of poolside relaxation to go along with your fatigue-inducing athletic pursuits. And what’s better than enjoying a delicious bite and cocktail next to a sparkling resort pool area?

At La Plazuela, Isla Navidad’s casual, ground-floor, pool-adjacent restaurant, you won’t find a more delicious or satisfying afternoon snack than the melted cheese with shrimp (see main photo above). While it sounds simple, resort chefs elevate the dish by utilizing mozzarella, white wine, and sautéed shrimp with bell peppers and mushrooms. The dip is served with your choice of flour or corn tortillas or a crusted baguette.

Wash it all down with your favorite cocktail (margarita on the rocks with salt, anyone?) for the perfect Mexican combo.
